Simon Rogan announces L’Enclume residency in Sydney
Chef Simon Rogan will bring a taste of his two Michelin-starred Lake District restaurant L’Enclume to Sydney, Australia as he prepares for a six-week long residency during July and August.
From July 15th until August 30th, along with a handful of his UK-based team, Simon will travel 10,000 miles to the Australian city to deliver the L’Enclume experience within Bathers’ Pavilion on Balmoral Beach.
Here Simon will serve his multi-course tasting experience from Tuesday through to Saturday, showcasing his iconic L’Enclume dishes and service style, with Australian adaptations.
Simon, a pioneer of the farm-to-table movement, plans to adapt a handful of dishes to incorporate native ingredients from farms and fisheries located close to Sydney. Wine pairings and a comprehensive wine list will be overseen by Rogan’s world-class sommelier team.
The Bathers’ Pavilion, which is located on the seafront of North Sydney, brings together 1920s art deco soul with Mediterranean charm and is typically renowned for its Australian coastal dining. L’Enclume and The Bathers’ Pavilion philosophy are closely aligned, as both restaurants pride themselves on celebrating exceptional product and the natural environment.
“It’s a dream to bring the L’Enclume experience and ethos to the other side of the world. Showcasing what we do so far from home will be a great opportunity to engage with a different audience who may know nothing about us. Both L’Enclume and Bathers’ Pavilion are in areas of natural beauty and in destinations that are awash with outstanding ingredients. I couldn’t think of a more appropriate place in Sydney to do it. Guests can expect a menu of some of our favourite dishes from L’Enclume, including classics, but with a few seasonal tweaks here and there according to the ingredients we have available to us.”
Joining Rogan in Australia will be Sam Ward, the Managing Director of Simon Rogan Restaurants, alongside other key members of the UK team. Cameron Johnston, head chef of Bathers’ Pavilion restaurant, is set to work alongside Rogan and his team during their time Sydney. Johnston will head to L’Enclume in April 2020 in preparation for Rogan’s visit. L’Enclume in Cartmel will remain open as usual during this period.
L’Enclume, is one of Simon Rogan’s five UK restaurants, alongside Rogan & Co, which holds one Michelin star, and chef’s table Aulis, both located in Cartmel. Aulis in London opened in 2017, whilst Roganic, which received its first Michelin star less than a year after opening, arrive in Marylebone in 2018. Simon Rogan opened an outpost of Aulis and Roganic in Hong Kong in 2019. Roganic Hong Kong won its first Michelin star in December last year.
L’Enclume’s Sydney residency will run from 15 July to 30 August at Bathers’ Pavilion, Balmoral Beach. Open for lunch Wed–Sun, and dinner Tue–Sun, AUS $350 for the food menu, payable at time of booking. Tailored wine pairings available on the night at AUS $200, AUS $350 and AUS $1100 per person.
Bookings will open online from 24 Feb, 10pm GMT. There is also a private dining room that can accommodate 20 diners.
